Key Lime Pie Cheesecake

Ingredients:Crust:
2 c Graham cracker crumbs
2 tb Sugar
1/2 c (1 stick) butter (melted & cooled)
Filling:
8 oz Cream cheese (softened)
15 oz Sweetened condensed milk
1/3 c Key lime juice
1/8 ts Lime oil (optional but good]
1 c Sour cream

Method:Crust:
- Combine all of the crust ingredients and press into a 9" pie pan or spring form pan. Bake at 350F for about 20 min. or until nicely golden brown then set aside to cool.
Filling:
- In a medium size bowl, thoroughly mix together the cream cheese and the milk, then blend in the Key lime juice and lime oil
- Beat in the sour cream and mix until smooth, pour into the prepared crust and refrigerate for at least 2 hours before serving.
