Potato Curry

Ingredients:6 to 7 Medium potatoes
1 tbsp. Oil
1/2 tsp Rai (Black mustard Seeds) 2.5mL
1 cup Crushed Tomatoes 240mL
1 1/2 tsp. Curry powder 7.5mL
1 tsp. chili powder 5mL
2 tsp. Paprika 10mL
1/2 tsp. Salt (or to taste) 2.5mL
2 1/2 tsp. Sugar 12.5mL
1 tbsp. Oil

1 cup Crushed Tomatoes 240mL

1 tsp. chili powder 5mL
2 tsp. Paprika 10mL

Method:1. peel the potatoes cut them into large cubes and boil them
2. Heat oil to medium hot in pan, add mustard seeds and let them crack.
3. add the crushed tomatoes, cover and cook for 4 minute. then stir in the curry powder.
4. add chili power and paprika, and reduce the Heat
5. add salt and sugar TO THE POTATOEs and then add them to the sauce. Cook for 5 minutes.
can be served with Parathas or a colorful Rice Pilau
