Pork Vindaloo

Ingredients:

Serves 4-5 people

Ingredients:

1kg Meat Cubes
200 grams sliced onion
3cm chopped ginger root
8 garlic cloves
2 tsp cumin
3-4 dried chillis
1 tsp cardamom
7.5 cm cinammon
1.5 tsp black mustard seed
1 tsp methi (fenugreek)
4 tsp white wine vinegar
1 tbsp ground coriander
1/2 tsp turmeric
1 tsp muscovado sugar
10 peppercorns

Method:

- Grind cumin, chilli, peppercorns, caromom, cinnamon, black mustard and methi. Add vinegar, salt (to taste) & sugar.

- Cook onions until brown. Add a little water and puree. Add spice mix. blend ginger and garlic. brown meat. Fry garlic ginger paste, then add coriander and turmeric, add all ingredients and cook until tender.
