Ingredients:

Serves 4-6

Two 1 inch cubes of ginger - chopped
8 cloves garlic
4 table spoons + 1/2 - 3/4 pint water
10 tbsp veg oil
900g meat - cubed
10 cardamom
2 bay leaf
6 cloves
10 peppercorns
1 inch cinammon
200g onion - chopped
1 tsp ground coriander
2 tsp ground cumin
4 tsp paprika mixed w/ 1/4 - 1 tsp cayenne
1 1/4 tsp salt
6 tbsp plain yogurt
1/4 tsp garam masala
black pepper - ground

Method:

- Blend ginger, garlic and 4 tbsps water in electric blender.

- Brown meat in batches and set to one side. Put cardamom, bay leaves, cloves, peppercorns & cinamon in same hot oil for a few seconds, then add onions and fry til brown. Add garlic/ginger paste and stir for 30 secs.

- Add coriander, cumin, paprika-cayenne and salt. stirfry for 30 secs.
- Add meat & juices. stirfry for 30 secs.
- Add 1 tbsp yogurt at a time and stir til blended, then stir/fry for 3-4 mins.

- Add 1/2 pint water for lamb or 3/4 pint for beef. Bring to boil. Cover and simmer for 1 hour for lamb, 2 for beef, stirring every 10 mins. Once tender remove lid and boil off some liquid. Sprinkle garam masala and black pepper before serving.
