Scalloped Potatoes

Ingredients:½ cup Butter
½ cup Flour
1 tsp Salt
½ tsp Pepper
3 cups Milk
1 lge Green Pepper, chopped
1 lge Onion, chopped
½ cup grated Cheddar Cheese
5 cups Potatoes, thinly sliced
(Optional: 3 cups cooked Ham)

(Optional: 3 cups cooked Ham)
Method:- Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper. Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.
- Return to heat and cook until thickened. Mix in the onion, green pepper and cheese. If you choose to add ham, do it at this point. Transfer to a large bowl and mix.
- Transfer to a 13x9 inch buttered baking pan. Cover with foil and bake at 350F for 30 minutes. Uncover and continue to bake for 40 minutes.
- Sprinkle with a little more cheese and bake for a further 20 minutes.
- Return to heat and cook until thickened. Mix in the onion, green pepper and cheese. If you choose to add ham, do it at this point. Transfer to a large bowl and mix.
