Apple Cake

Ingredients:2 Eggs, beaten
3 cups Flour
2 tsp shredded Lemon Peel
1 tsp Baking Powder
1 tsp ground Cinnamon
¼ tsp ground Allspice
¼ tsp Salt
1 cup granulated Sugar
1 cup packed Brown Sugar
1 cup Cooking Oil
1 tsp Vanilla
3 cups peeled chopped Apples
1 cup chopped toasted Pecans
3 cups Flour
2 tsp shredded Lemon Peel
1 tsp Baking Powder
1 tsp ground Cinnamon
¼ tsp ground Allspice
¼ tsp Salt
1 cup granulated Sugar
1 cup packed Brown Sugar
1 cup Cooking Oil
1 tsp Vanilla
3 cups peeled chopped Apples
1 cup chopped toasted Pecans
Method:- Allow eggs to stand at room temperature for 30 minutes. Meanwile, grease and lightly flour a 10 inch tube pan; set pan aside. In a medium bowl stir together flour, lemon peel, baking powder, baking soda, cinnamon, allspice, and salt; set aside.
- In a mixing bowl combine granulated sugar, brown sugar, oil, eggs, and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add flour mixture and beat on low speed just until combined. Fold in apples and pecans. Spoon batter into the prepared pan.
- Bake in a 350F oven for about 1 hour or until a wooden toothpick inserted near the centre comes out clean. Cool cake on rack for 10 minutes. Remove from pan. Cool thoroughly on wire rack. Sprinkle with sifted, powdered sugar. Cover, and store in the refrigerator.
