Carrot Cake

Ingredients:

2 cups Flour
2 tsp Baking Powder
1 ½ tsp Baking Soda
1 tsp Salt
2 tsp Cinnamon
2 cups Sugar
4 Eggs
1 cup Oil
2 cups Grated Carrot
8oz Crushed Pineapple
½ cup Walnuts
½ pound softened Cream Cheese
¼ cup Butter
¾ cup Powdered Sugar

Method:

Cake:

Mix flour, baking powder, baking soda, salt, cinnamon, sugar. Add eggs, carrot, pineapple (with juice from can), oil and walnuts. Mix thoroughly. Pour into a well greased oblong baking pan. Bake 40-45 minutes at 350F.

Frosting:

Mix softened cream cheese, softened butter and powdered sugar until smooth. Add a little milk if desired. Spread on top of cooled cake.
