Thai Chicken Patties

Ingredients:

1 chicken breast
¼ cup fresh coriander
1 lime, juice only
½ red chilli
1 tbsp olive oil
salt and freshly ground black pepper

Method:

- Place the chicken breast, seasoning, coriander, lime juice and chilli in a food processor. Blitz until combined and minced.
- Form the minced chicken into three small patties.
- Heat the olive oil in the frying pan. Add the patties and fry for 3 minutes, either side.
- Serve with a dipping sauce of your own choice.
